Chef Kirke grew up in an Italian neighborhood in Staten Island, New York. Much of his original training came from his Grandmother Elizabeth while living in her home as a young man. At 4pm each day Kirke and his Grandmother would begin discussing and prepping the menu for dinner for six to be served by 6pm. Chef Kirke claims that this is where he learned 90% of his traditional approach and technique to Italian cooking.
Chef Kirke has owned and operated 5 restaurants over the years and has been cooking in the Pacific Northwest for 20 years. His classes have been selling out for six years.
